An authentic and original urban distillery, Still Austin was founded by three Austin families – with the goal of creating true Texas whiskey using local ingredients. They were inspired by tequila and mezcal distilleries, which leverage the resources surrounding them to craft their spirits. Using heirloom grains which they are helping to reintroduce to Texas farms, master distiller Michael Delevante has partnered with well known whiskey industry “nose” Nancy Fraley to produce their high quality new make whiskey – in the first legal grain to glass distillery in Austin since Prohibition.

While the bourbon is quietly aging, Still Austin offers three variations of their exceptional new make whiskey – consisting of a mash bill of corn, wheat, and barley. In addition to the pure new make whiskey, they have Daydreamer – a citrus infused spirit using valencia, tangelo, and bergamot, and Mother Pepper – a chile infusion using chile pequin, smoked serrano, and aji amarillo. Unlike many flavor infused spirits, Still Austin doesn’t use any sweeteners or artificial flavors.
